Today I will be making my very first Tasteful Memories recipe. And it had to be my mom's tiramisu. It's one of those recipes I've known for years. And every time I make it, it reminds me of home. So today I will show you exactly how she makes it.
So we will need 225 ml of cream, 225 grams of mascarpone cheese, 70 grams of sugar, 400 ml of freshly brewed espresso, 50 grams of dark rum, but I only had white this time, and one pack of ladyfingers, and also some cacao for dusting.
In a large mixing bowl, we will add our cream and our sugar. And we will whisk until soft peaks, for about 5 minutes. Now, since I finally achieved soft peaks in my cream and sugar mixture, let's add our mascarpone cheese. And whisk again until everything is combined. And just like that, we have our cream mixture ready. So let's go assemble the tiramisu.
So now we will start off with mixing our rum into our espresso mix. And we will start by dipping our ladyfingers into the coffee for about 3 seconds. And we will lay our dish with the ladyfingers as a base. And now we will be putting our cream mixture on top of the ladyfingers. Be generous. More cream, the nicer it is. Now we spread it all across the ladyfingers in an even layer. And if we see that we need more, we'll add more as we go along.
And now again, we put another layer of ladyfingers. And now we're going to put another layer of the cream mixture. You can be even more generous in this one, since we have quite a bit left over. Now we nicely even it out on the top. And the tiramisu is ready to be dusted. Don't be afraid to get messy here.
And now we need to sit it in the fridge for about 2 hours, preferably overnight. And you know what used to be the best part when mom used to make tiramisu? She allowed us to eat all the leftover ladyfingers, the ends, and the leftover cream.
And that's my mom's tiramisu. Simple, delicious, and one of those recipes that always makes me happy. I hope you enjoy it as much as we always have.
